Our favorite fast meals are omelettes. I make myself a 2 egg omelette and fill with whatever leftovers I have,for instance chopped red onion and red pepper, sliced chicken breast, serrano ham or pieces of chorizo sausage, some jalapeno slices, cheddar and monterey jack cheese and hot sauce (Texas Pete or Cholula)
Whip up a couple of eggs in a bowl, it doesn't need to be well mixed, add a pinch of salt and a few grinds of the pepper mill. Pour in a low to medium heat pan. Put onion and pepper on half of the eggs since you're folding it over, add cheese, sliced chicken breast and everything else. Hot sauce over the content and lastly some more cheese before you fold it over (when the eggs have coagulated). I like my eggs with only the slightest hint of golden brown, but feel free to leave it in to your desired burn level.
You can personalize these into infinity and half of one is usually enough for me, the other half I bring with me for lunch the next day.
I make JR a 3 egg omelette and if you have a big pan 2 eggs may make it too thin and difficult to fold over. It could easily break making you disappointed over the flawed look and don't wanna put it on instagram
