We're not really doing any processed meat anymore and bacon being one of them we limit our consumption to maybe once a month or so, probably even less than that.

One advantage to our country cottage is the # of people with smoke houses, some pretty elaborate.
Our neighbor smokes hams and bacon, among many things, without using the carcinogenic Nitrites and preservatives.
