I had rabbit recently, must have been the fittest one in the region. Tough as old boots. At least the butcher had skinned and readied the bunny for the pot.

Sorry to hear you guys had bad bunny dishes. Fried bunny with biscuits and gravy is one of my all-time favorites.

I guess there is a big difference in bunnies and hares.

It seems that JR has not yet learned to appreciate the glory that is Lutefisk.
May I suggest a large serving every other day from now until Easter, or the closest Pagan holiday .

The roads were quite awful this morning and a semi took shortcut through a ditch, swiped a power pole with his trailer. Nobody hurt but we've had no electricity all day. So I nabbed my geezer and went for a drive to a little town S of here where a fish truck is set up. Bought cod, halibut, snapper and a few lobster tails. He had crab but Dungeness and it's always bitter so I passed on that. Also a beer store there that had the lights on chuckle.gif so picked up some coolers. All the way there we saw skid marks of people flying off into the ditches rofl.gif why don't people slow down when the roads are icey and they've got summer tires on? dunno.gif

Powers back on I can put the kerosene lantern away beercheer.gif

We decided to go with this simple roast duck, since we've yet failed to find anything Emeril makes that's not absolutely delicious!





So, we whipped out the duck.

Here all massaged with olive oil, salt and pepper and ready to go into the hot oven.

So after 22 minutes we started getting worried because it turned dark so quickly, so we lowered the heat to 350f and let it sit for the remaining time.

The duck was fantastic and I have 2 cups of duck fat left! Holy crap I'm so full!

This dinner gets 5 dancing bacons out of 5!

Best duck I've ever had, not greasy and fantastic taste.
That first picture was a little creepy though, I was glad to see it go in the oven after it stood up and all. chuckle.gif
