Epic Meatloaf!

I heard Prometheus hasn't been able to sleep in anticipation of catching a glimpse of a fantastic meatloaf we made the other day. I have to say it was one of the most amazingly epic meals this year if not THE most. It was impossible not to moan whilst eating it was that good. damned.gif

As usual we strayed slightly from Emeril Lagasse

Emeril's Most Kicked-Up Meatloaf Ever

Ingredients

2 tablespoons butter
1 large onion, chopped
1 rib celery, finely chopped
1/2 red bell pepper, finely chopped
2 teaspoons minced garlic, plus 1 teaspoon
1 teaspoon chopped thyme leaves
1 teaspoon chopped rosemary
1/3 cup chopped fresh parsley
2 eggs
1 1/2 teaspoons Dijon mustard
1/2 cup ketchup, plus 1/4 cup
2 tablespoons plus 1 teaspoon Worcestershire sauce
1/2 cup Heavy cream
2/3 cup Breadcrumbs
1 pound ground chuck
1/2 pound pork sausage (such as breakfast sausage)
1/2 pound ground veal
1 1/2 teaspoons salt
2 teaspoons plus 1/4 teaspoon freshly ground black pepper
4 slices bacon, cut in half
2 tablespoons white or red wine vinegar
1/2 cup canned tomatoes, chopped or crushed

So we used only beef, no veal or pork sausage. No heavy cream either, just milk and butter. JR worked his magic with the spices and it was just incredibly perfect and I'm getting hungry just writing about it chuckle.gif

With that some baked potatoes with cumin, rosemary and ...oh and duck fat yay.gif

...and a cold beer of course thumbsup.gif

I don't usually get too excited over meatloaf, but wow...it was the best I'd ever had. I kicked it up by using 2 Onions, & 1/2 of a large garlic. 2 teaspoon dry thyme 1-1/2 teaspoon chopped rosemary &
3 teaspoon parsley.

Not having any sausage available I added the classic Jimmy Dean breakfast sausage seasoning of a tsp of sage, 3 large pinches dried cilantro and 2 large pinches red pepper.

I added a tablespoon of brown sugar to the sauce on top to sweeten it up a tad.

IF you like your bacon real crisp fry it 3/4 done before you put it on top, so it's still pliable to fit over the entire top of the meatloaf prior to putting the sauce on. The recipe called for four pieces, but I used 8.
Make this, you'll thank us believe me.

We had some chipotle we were thinking about adding but decided against it hmm.gif Maybe next time, but if that meatloaf gets any better our brains might explode chuckle.gif

The sad historical fact is Stalin sent a bunch of ill equipped "undesirables" here to be slaughtered. Not saying the Finns didn't do a bang up job on it. gaah.gif
