CASU MARZU - This Sardinian sheep's milk cheese has an unusual ingredient: live maggots. They start to eat the cheese, allowing it to decompose faster, and one slice of Casu Marzu may be home to thousands of maggots. The cheese has actually been declared illegal, but is still enjoyed by some Sardinians.

PAJATA – To rustle up this Roman dish, milk-fed calf intestines are cooked without emptying them. During cooking, the heat turns the partially-digested milk inside them into a thick, cheese-like sauce. Once sliced, it can be served either on its own or as a pasta sauce.
