It varies, I prefer the leg from roasted chicken, both leg/breast (even) from roasted turkey, but the breast on roasted duck.

Yes, I find with roasting chickens that the breast seems to come out on the dry side, the same with turkey but I enjoy the turkey breast with homemade cranberry sauce, as for duck, I guess because the legs are so small that they dry out somewhat during roasting, but the breasts always come out moist. Well, that's my experience with roasting fowl.

It's an art form almost to get a juicy roast bird. This recipe we liked very much, it's so simple and made a great meal. With moist breasts I might add chuckle.gif

Thanks Octo, maybe that's the problem...the chicken is wet inside and out...which creates the steaming, which I don't want.

I do my roast chicken just a little different from octo's..I add a half lemon and a sprig of rosemary to the cavity before tying up the legs..drool.gif
