Epiglottis , which covers the lung entry when swallowing. A tiny bit of food trapped in there will cause it to try to expel via hiccups.

That's what I thought. That's the "flap" I was talking about. But, NO, the videos with the young doctors are saying it's the diaphragm which is way down low below the stomach.
