SO glad it isn't Moose Knuckle.... :-)

I really like Ostrich. It's kind of like beef but stronger.

Although I am a strict vegetarian at the moment but my list of foods that I am going to enjoy eating once it is over is growing by the day.

In nyc, Speciality meat means something they caught in the sewer, and killed in a back room in ChinaTown, is now on your plate.

I have never eaten tongue and strangely enough I recently asked my mother why she never cooked it for us. She explained that she never desired to eat that (and other parts) part of the animal. If I read her facial expressions correctly, those parts of the animal are considered undesirable by her (and she grew up on a farm).

Now I am curious as to what it tastes like boiled for a long time. Would it be similar in texture to corned beef brisket?

I don't know what corned beef brisket tastes like so I don't know. A lot of people can't get over the fact it is a tongue so not even the hunters these days want to keep it. That's why I got it, my sister's hubby hunts.

It's very tender meat, thinly sliced it's perfect for sammiches hyper.gif

Yes, I thought it might be tender. And corned beef brisket is extremely tender too when boiled for a long time.

Was the taste gamey or did you add your magic spices to it?

It tastes like very flavorful beef, wild beef. It doesn't taste gamey in my opinion 13.gif
