i tried to look that up but found no opinions, just what it is.
I ate a good bit of it at the times I lived in New Orleans and visited the bayous of Louisiana. It's good stuff, as long as you like sausage generally. Usually, you find it IN something, like a gumbo or stew, or sprinkled in a side dish.
It's got a very smoky taste, and some folks like it with a beverage and cheese like a bar snack. And, contrary to what you might have been told, it's not necessarily super spicy, unless that's what the maker cranked out.
