Parmesan fish

O M G I had some fish fillets in the freezer. Mixed 1/4 c mayo and 1/4 cup parmesan tossed in maybe 1/4 cup fresh frozen dill and smeared it over the fillets, 15 minutes in the oven and emo-daj.gif couldn't stop nibbling it. Really really good. Really too good.

Got some fish today that I threw in the freezer. I was wondering what to make of it. I'm making mayo tomorrow anyway so I might give this a try. beercheer.gif

My Sis served some de-li-ci-ous smoked salmon on her birfday party last night.
And, of course, discussion and debate arose around the table about the pros
and cons of farmed fish...and how to know exactly what you're buying.

Now, my folks do not seem to understand the threat, but...
beware, beware - Frankenfish is coming.

It was amazing blink.gif not 1/2 cup dill maybe a 1/4 and I tossed in finely chopped onion. Pretty darn good! hug.gif

Farmed fish is a huge issue here in BC, everytime the gov wants to approve one there's demonstrations and anger. People have shut a few down because they've caused so much damage to wild salmon pop.s.

How's it goin AS?

Damn that sounds so good!! I've been busy cooking and baking all day. Made my daughter a lasagna, cookies and some bread. All grain free. Well except for the lasagna. 13.gif Don't ask me about the star wars cookie stash. vic.gif

This recipe is all over the thread rofl.gif

1/4 cup mayo
1/4 cup parmesan
1/4 cup fresh dill
finely chopped onion (I used about 1/4 cup but as you like, also the dill was my addition)
smear on fish, sprinkle seasoned bread crumbs on top and bake at 400F ~15min. depending on thickness of fillets. hi5.gif
