Here is my lunch menu.

Wild Scottish Salmon. Spinach and kale mix. New potatoes.
Fresh salad of cucumber iceberg lettuce, tomatoes, wild organic rocket, organic beetroot, celery, cress, grated organic carrot, fine grated ginger sprinkled on top. Dressing is extra virgin olive oil with light cider vinegar and black pepper.

A glass of organic beet juice with organic ginger.

I think that is good balanced healthy lunch.

Hospital food is atrocious. It's not doing the patients any favors.

My mom has been battling breast cancer this past year and she's doing great. All her levels are excellent and she has a very good diet.

I honestly believe the diet is a major contributory factor on fighting any illness.

What shocks me is the lack of any goodness in hospital food considering that would be the most important place to get a good balanced healthy diet.

Here is a typical example of the menu at QEH.

potato soup. tuna pasta bake. Sponge and custard.

Never any salad or much in the way of fresh vegetables. Call that healthy and balanced? I certainly don't.

A tip when staying at the hospital is to claim you're a vegetarian. You'll get a lot more veggies. At least over here 13.gif

I just had my dinner. Here is what I made.

Mung bean soup.

1 cup of mung beans pre soaked.
1 onion.
1 whole garlic.
a generous amount of ginger.
various mixed wild organic mushrooms a good handful.
2 bay leaves.
2 cloves.
the stock of some good sized lamb bones including the marrow, Pre prepared.
Teaspoon of himalayan salt.
Freshly ground Kampot pepper. (black)
Tablespoon of some very special organic coconut cream.

This was washed down with a home made smoothie.
Carrots.
Kale.
Spinach.
Beetroot.
Celery.
some of that special organic extra virgin coconut cream.
2 tablespoons of Manuka honey.
Grated organic ginger.

I enjoyed that greatly.
