Shortbread Challenge

My friend and I are having a bake off rofl.gif she says her shortbread is the best, I say I can do okay (I am part Scot after all). So I'm making shortbread today and Whaler is the judge. Blind folded so he doesn't know who's shortbread he's judging. Just which one is best.

This shortbread is from heaven. Unreal.

Quote:Ingredients

½ cup of salted butter
½ cup of hard margarine
½ cup of icing sugar
1½ cups of flour

Try Premium Almond Paste in This Recipe.

Instructions

Whip the margarine, butter and icing sugar together well. You can use all butter for sure,then it is a shortbread for the purist.
Once it looks all deliciously creamy, resist from eating it by the spoonful, and get your flour ready.
Start the mixer and slowly add in the flour, until it has all been added in.
Then you can proceed to let your mixer do all the work for you and whip it for 6 minutes. You are wanting lighter than air shortbread here.
Using a small cookie scoop, scoop the dough out onto an ungreased baking sheet. Top with sprinkles or a piece of Christmas cherry.
Bake them in a 275 degree oven for about 30-35 minutes you want to dry out shortbread in essence, not bake it, thus the low temperature.
(If you have a warm kitchen or live in a warm climate, cool the cookies in the fridge then bake. They won't flatten out)

I've spent HOURS pounding shortbread dough and never had it turn out like this. Cookies aren't supposed to be good for you, they're supposed to be yummy! I don't like cookies much but these are from heaven.

Wow Shortbread is tasty. I haven't bought any in ages. Good on you guys for making your own. A British Tory M.P said a couple of days ago that the reason England has a cost of living crisis is that the poor don't know how to cook! If the Conservatives win the next general election I'm seriously thinking of leaving the country.

I can see by your coat my friend you're from the other side. Just one thing I got to know. Who won?
