It's my cooking day today, so beef stew for hubby and turkey and veggie and barley curry for myself, my sis and her hubby (I cook lots and share). I just made a blueberry compote because I asked my daughter to make a cheesecake with blueberry swirls and she agreed. I also plan to make bran muffins with apple strings, but I will be using an organic bran cereal for a change.

So the bran muffins came out very tasty with the added apple strings and almond slivers. My daughter's cheesecake didn't come out as well as before but this time she added sour cream and the taste is more tangy and the texture too light for my taste.

We have decided to eat more fish as the older I get the more red meat is harder to digest. So, today will be baked salmon steaks coated witha dijon mustard, maple syrup and garlic mixture and boiled cabbage, and either rice noodles soaked in a sauce or kasha.

And my daughter's black berry and pistachio cheesecake baked with Greek yogourt - one of life's luxuries for us.

The next few days will be dinners of pickerel and haddock.

Who knows, this shift in diet may lead me into becoming a vegetarian again.

US, check out the seafood selection at the store in Spain, I didn't even get the fish selection in the same frame. Food so fresh it's still twitching

^same in portugal
i miss that;the fresh seafood,fresh baked daily breads/excellent cheeses,soups,wide variety of fresh veg etc
when i lived there (& also traveling throughout europe)
america seems stale foodwize in comparison

Buttermilk pancakes from scratch this morning and, of course, coffee brewed in a French press. They are so fluffy.
