tonight it's a small pork loin for hubby and lasagna roll ups for me..i don't like pork that much ..besides he only bought one big enough for him chuckle.gif

We are making Avocado salad Tortilla wraps. real easy.

Diced Tomatoes, onions, bell peppers, avocado, drizzled with squeezed lime, rolled up in a flour tortilla with a dollop of sour cream.

Its 81 degrees here and too hot to cook.

81 damned.gif Wow, is that warm for mid April. We're finally creeping into the lower 50's for highs, but the nights are still hovering around freezing.

Temps are totally erratic here, Over the weekend the highs were low 50s with freeze warnings at night. Up and down with 60 degree temp swings in a day. I've never seen anything like this.

We like avocados as well but at $1.69 a small one we don't buy them as much as we would like to.

Our version of shepherds pie (people use different vegetables) baked in a large rectangular pyrex cooking dish,filled with a bottom layer of scrambled hamburger, with a middle layer of green string beans (the soft easy to eat canned variety) followed by a top layer of mashed potatoes,medium browned when finished baking and served with a sprinkling of grated cheese and butter and salt along with a good amount of cranberry sauce that goes together with it perfectly (the sweet canned variety with sugar,not that disgusting sugarless cranberry sauce that tastes like rotting beets and what i imagine dirty feet might taste like (*-*)

Love Shepard's pie yay.gif 'specially with whipped potatoes. If you throw in a cup of sour cream while mashing they are sooo good.

Mashed potatoes really need to be of a creamy and as you described (whipped) consistency,like moist and fluffy yet still kinda firm,not all dried out and clumpy and sometimes into our shepherds pie we will take a couple of slices of cheese and break them up into little pieces and sprinkle them all across onto the mashed potatoes before baking and when its done and ready to eat its damn good and that pyrex dish weighs like eight or nine pounds and maybe even ten and we eat it for a couple of nights and for me like sometimes i'm eating it again at like three in the morning while watching classic movies cuz i work second shift,what i'm doing right now,well "they" think i am anyways, but obviously i'm not at the moment (*-*)

That's expensive! damned.gif We get a bag of 5 for around 2 euros when they're on sale. Good thing about avocados is if they're no good for eating (past ripe) I use them on my face. chuckle.gif
