We're going to have bbq'd swordfish and small new taters and steamed spinach tonight, so I need to search out some good marinade recipes. cheers.gif

I recommend trying it Shadow. They are no longer endangered (were in the 1980's).

Quote:Swordfish is made for the grill. Is is always sold as steaks, and the meat is so firm and, well, meaty, that many non-fish eaters will gladly eat sword. This texture also helps prevent the steaks from falling apart on the grill, a huge plus.

A typical swordfish meal would be a simple olive oil-based marinade, then a time on the grill, then served simply with lemon, salt and herbs. Good sword needs nothing more than this.

I think I'll just brush it with a little lemon/garlic/olive oil mixture so that the unique taste isn't messed with too much.

iagree.gif I'm a fan of cajun spice on cheap fish like bass but your swordfish seems too good to ketchup up.

Hubby is not a fan of spicy spices like cajun. Even when were down visiting San Antonio, I had a lovely cajun meal and he had his meat and taters; he says he prefers to be able to taste his food, not just the sauce/marinade.

I love cajun seasoning hyper.gif

I made hushpuppies for the first time on Friday. I didn't even know what they were 13.gif So I made some and realized they would greatly benefit from added cheese and bacon bits. scream.gif So I made some of those the next day.... drool.gif Delicious!

Made with buckwheat of course and added garlic

Rye bread is a staple in most Finnish homes, there's a huge variety. Way more popular than wheat bread. beercheer.gif
