I've got a pot of mixed veggies, with minced pork, green lentils, pearl barley, spices galore with a good measure of mild curry. I call it my curried pot luck.

Heres a Broccoli casserole recipe I make. Really good around the Holidays:


2 heads Broccoli diced into about 1/4 inch chunks
1 can cream of mushroom soup
1 egg
1/2 cup mayo
1/2 cup cheese (any kind I use cheddar)
1/2 cup crushed crackers ( again any kind will work )
1 Tablespoon butter
salt and pepper

Mix it all together, bake for 30 minutes on 350.

Good stuff. even the kids like it

I've been meaning to make sweet potato fries for some time. BaconDance.gif I have to do that. JR found some precious looking sweet potatoes at the store, but that's for another thread damned.gif lmao.gif

I just made some garlic&pesto bread , omnomnom... Just fried some white bread in a mix with butter, olivoil, garlic and greenpesto. so easy and so good drool.gif

Yep, my sister's friend makes this salad and it is delicious.

I will be making this salad tonight...yummy.

I had to alter the dressing recipe because I decided to substitute a heaping tablespoon of honey for sugar, after I added it, I then recalled my daughter telling me she does not like the taste of honey (dunno.gif) - so I needed to hide the honey taste and balance the sweet and sour.

So here's what i did (Note: the measurements are close estimates, as I usually don't measure anything, because I just add, taste, add, taste):

Start with around 2 tablespoons whipped dressing (something like Miracle Whip)
3 tablespoons of mayo
1 heaping tablespoon of honey
2 teaspoons creamy ceasar dressing
2 teaspoons thousand islands dressing
a splash of white vinegar
(no sour cream)

taste it at this point to check for sweet/sour balance -

if still too sweet...continue adding more mayo, whipped dressing and just a little more vinegar to get to where you prefer it. If it tastes right, then whip up another batch as above to make enough to coat the broccoli and bacon.

I'm also roasting some beets and will make carmelized brown mushrooms, and, so, that's what's for dinner.

We made burgers last night and have leftovers for tonight. yay.gif Best burgers I ever had! JR made the most excellent burgers and I baked the bread with almond flour and buckwheat. woohoo.gif Homemade fast food!
