It was delicious, but I modified it a bit and it's tastier that way imo. I translate all recipes into metrics and make a double batch which would mean I add instead of only almond flour (for a double batch) 2.6 dl almond flour and 1 dl buckwheat flour. I have only recently found this awesome recipe so I will experiment some more for optimal buns.

Swedish Breakfast Buns

For 4 Low Carb Swedish Breakfast Buns-

Ingredients:

3/4 cup almond flour
1 Tbsp flax seeds
1 Tbsp sunflower seeds (shelled)
2 Tbsp psyllium husk powder
1 tsp baking powder
1/2 tsp salt
2 Tbsp olive oil (extra virgin, or light)
2 eggs
1/2 cup sour cream (or creme fraiche)

Preheat oven to 400 degrees. Mix almond flour, seeds, psyllium, salt, and baking powder in a bowl. Add eggs, olive oil, and sour cream and mix it carefully. Let it sit for 5 minutes.

Cut the dough into 4 pieces. Shape into balls and put in a cake pan (I use a 9 inch circular pan, but anything really will work here so long as it has sides). Bake for approximately 20-25 minutes.

I also didn't double the eggs, I used 2 - 3 in a double batch and only 3 Tbsp psyllium.

We have taken on a Boarder to help us make ends meet here. An elderly lady, things are working out very well.

Hotdogs and egg samiches are off the menu for awhile chuckle.gif

Good idea, probably helps her out lots too, I hope it works out for everyone. Sounds like she hasn't family to live with or she would be. And family matters even if it isn't your own.

Yes no Family and this arangment has reduced her bills by 60%. Shes in Tune to World events and 'Awake" as well. So its interesting to have a live person to chat with about things.

and:

We have been though three electric can openers in 2 years. They are all crap and drop the can half way though opening them.

Even the manual ones we keep as a reserve and for power outages fall apart after several uses.

I just made some bread I used my basic Bread recipe but I tossed in a envelope of Lipton Onion soup dry mix, This stuff is really good, Half the 1 1/2 lb loaf is gone already chuckle.gif

Homemade cabbage rolls, and plenty of 'em. I froze some for this upcoming Thanksgiving dinner.

What herbs do you add...this time I added garlic, parsley and oregano, but still they are still just a tad bland?

just made home made mac and cheese..had a really good cheddar..in the oven now ..probably a rotisserie chicken to go with it for dinner..US my husband makes stuffed cabbage ..he has his grandmas recipe and it is fantastic ..seves it with either sauerkraut or sour cream
