mmm mmm been a long time and that looks delicious!

Found a tuna salad recipe that's outta' this world...

 

  1. 2 cans (6-ounces each) solid white tuna, packed in water, drained.
  2. 2 hard-boiled eggs, peeled and finely chopped.
  3. ⅓ cup mayonnaise.
  4. juice of ½ a lemon.
  5. 3 tablespoons thinly sliced chives.
  6. 1 stalk celery, finely chopped.
  7. 1 tablespoon dill pickle relish.
  8. 1 tablespoon finely chopped red onion.

I'll never use anything else.

I've kicked it up a notch with a tablespoon of small capers.

It works great with smoked salmon and / or shrimp too.

That sounds great JR. I've tried different tuna salad recipes but could never make it quite right, it always came out bland. I bet that lemon juice gives it a nice zip.

I just had cold leftover chicken fried rice from the Chinese place, it's awful but when you're really hungry it's better than nothing.

I tried making hard boiled eggs last night but couldn't get them to peel right so I ended up eating several yokes. Is there some kind of trick to that?

If the eggs are really fresh, that can be a PITA.

Sometimes running cold water while you peel 'em can help... but not always.

I'm munching on leftover chicken broccoli casserole... always better the next day.

after boiling put in cold water for a bit before trying to peel

when peeling-there is a light thin layer of film right under the hard shell..& as you start to peel..you should notice that..pinch & break through that film & then peeling rest of egg will go smoothly thereafter
